They typically don't have handles or sheaths, as it's a traditional tool that was designed a very long time ago.

Dokan has built on the classic design by adding a wooden handle, and allowing the knife to fold. This kiridashi folding knife is about the best approximation of a traditional Japanese pocket knife that you can get. The blade tucks away neatly in the handle so that you won't be accidentally injured.
